Virgin organic coconut oil is a great addition to your pantry. It contains a fat called lauric acid which can improve good (HDL) cholesterol levels and can be easily digested. Coconut oil is very stable when heated and therefore a good choice for high temperature cooking, replacing other vegetable oils (which when cooked at high temperatures can release dangerous trans fats).
